not backing up .txt or .log files

1. Is there any way to view the catalogs with a txt viewer? I would like to audit the backup and see whats being backed up.

2. I went to test a restore ( without doing one ) and noticed that .txt and .log files arent backed up ( not showing up in the restore screen )? Is there a way to change this? Also, any other files not being backed up?

1.What Is being backed up can be checked in the selection list being used in the job propersties. and what has been backed up can be seen by what can be restores from the backup.
2. To include or exclude specific file types refer the following technote:
