Its pretty simple to be honest, i would do the following
Firstly read this document regarding Exchange 2010

1. In your Exchange 2010 Environment, create a mailbox for the EVAdmin
If the EV Admin already has a mailbox, move it to Exchange 2010
2. Run the Powershell commands to apply permissions and throttling policy
These will not work if the EVAdmin does not have the mailbox on Exchange 2010
3. Create new System Mailboxes on the Exchange Servers
You can read the installing and configuring and it will discuss how to best set up the system mailboxes in regards to DAG Failovers etc
4. Set in place the SynchInMigration registry keys so that EV will correctly link the mailbox
5. Add the Exchange 2010 targets in Enterprise Vault
6. Test moving a mailbox with an archive from 2003 to 2010
7. Run Provisioning and then synchronize the test user
8. Ensure that you can archive/retrieve/restore and run in report mode against the user
And thats really all there is to it, oh and install the OWA extensions etc

Hi Moltron1,
Since you are already running Enterprise Vault 10.0.4, you just need to move the archive-enabled mailboxes from one Exchange Server to another. Take a look at this technote

According with Microsoft, you cannot have Exchange 2003 and 2013 in the same organization:

"if any Exchange 2003 servers are detected in the forest, the install will not be allowed to proceed"
Thus, you need to migrate all the mailboxes to Exch2007 or Exch2010. Then, remove Exch2003 and finally move all the mailboxes to 2013. In the Enterprise Vault side, the technote above will help you to update the archives with the new mailbox locations. You might want also take a look at our partners solutions since they might have other options available.
