One of our customer has EV version 7 installed and has recently upgraded to exchange 2010. There EV data seems to be mostly corrupt so they are looking to get rid of EV. They don't mind ingesting the mail back into exchange because sooner than later, they will be going to Office 365. Question, I have is what is the best way to uninstall EV in this situation and ingest the mail back into exchange?

1st you need to consider how much storage you need on the exchange server , make sure there is no limit on the mailbox size before you attempt to restore the item back to mailbox .
You can also Export the archive to a pst file if you don't wish to restore to the mailbox.

By the way, if/when you go down this route, do it in small stages so that you can address any export issues that you may encounter - don't, for example, export back EVERY archive in one go.
