What is the best recommended OS for EV 2007 and Why?

Anyone can give me a recommended OS for EV 2007 Server and Why?
 
As far as I know from EV Compat list. There are varios of OS version that support but I still want to know what is the best recommended and why?

Are you talking about Server OS?
There aren't many supported one's here...

And I defenitely recommend Win2k3.
Why?   Security, Stability, etc. etc. (Win2k and Win2k3 are the only ones supported in a Server deployments AFAIK)
