What to think when upgrading Exchange from 2003 to 2007 and archiving is running against the 2003

One of our clients has EV 7.5 and are archiving users on a Exchange 2003 server. They have set up a new Exchange 2007 environment is in a short time beginning to move users from the 2003 env. to 2007.

What steps is necessary to take to secure the transition to 2007?

Do I only have to set up the new 2007 server as a target and when users are moved everything works smoothly???

Anyone done this already?

Be aware that Exchange 2007 OWA has currently some limitations, which forces you to publish EV to the Internet to be able to use Search/AE.
