EV syncs with Exchnage permissions. They are probable sharingt their calendar or some other folder. Check that first

You will create 2 folders in the E-Forms. One French and the other English. Place the forms in the appropriate folder. The workstation configuration will only read the language which it is configured to read.

FYIWhen you upgrade a new Database will be added named Monitor. Stopping at 7.5 is probable a good idea for now. Make sure you backup all of your databases before upgrading.
