Pretty much no SharePoint backup software will backup the configuration database or other data files -- they only back up the content database.
Is this GRT agent an exception?? Can someone please provide a comprehensive description of everything that gets backed up with this agent -- or does this agent only back up the content database??

The SHare point agent from backup Exec is capable of backing up configuration databses, search index databases, services databases, content databases of top level sites and subsites.
Granularity in restores up until BE 12 were provided only for documents and document libraries.
But from 12.5 all list items can also be granularly restored to sites and to folders on volumes.
I have also heard that the IIS information associated with each site and subsite gets backed up; so if a site goes down and only a list item from that site is to be restored, then that should be possible too as the IIS information gets rebuilt and when a user logs on to that site, only the one object restored is accessible.
So pretty much everything in your farm should be protected with this agent.
FYI: - You can also for double security use the 2 stage recycle bin provided within sharepoint to perform granular restores of objects deleted.
By default the first stage bin keeps items for 30 days and the second for 45 days.
