We have an account that created all the backup jobs for our server, but we will be disabling that account very soon; is it possible to change the username for those backup jobs to another user?

I guess you can do it by this way..
Create a Windows login account with ADMINISTRATOR rights and then add the same account to BE console as follows:
Step 1) Open BE console---> Click on Network-->Logon Accounts----> Click on New and input the logon credentials of the New Administrator account which you created --> Click on OK.
Step 2) Now Highlight the account (OLD Admin Account which you want to disable) and then click on REPLACE and then when the window pops up, select the NEW admin account. This will automatically replaces the Old admin account with New admin account and all the JOBS which have connectivity to other clients thru the OLD account will access with New admin account now on

I would also suggest you stop and start all services and do a small test backup to insure your new account has the correct permissions and works as it should.
if you use Encryption keys that were created while logged in as the old user ID then these keys might need recreating (note this comment might relate to if the keys were restricted or common)
