The technote ZeRoC00L refers to is to remove a Microsoft Exchange server from an Enterprise Vault environment. Do you want to remove Enterprise Vault traces from your entire organization?

I _think_ you may still need the old target to be kept in the VAC, since if you have archived items ...  you'll need to retrieve them.  With each archiving task goes a 'hidden' retrieval task.  So in my opinion the best thing would be to set the archiving task for the old server to either manual or automatic, with no schedule.
