Hello,
We are working with Enterprise Vault v8 sp5 to archive Exchange 2007 mailboxes only.
one user delete some items by mistake from his enterprisevault, the items are not available on archive explorer (only have outlook shortcuts)
we already set a daily backup of the following
1-directory database,
2-vaultstore database
3-vault partitions
How we can only restore the user deleted email without interruption of other users items

So what you will need to do is do a restore in your lab of the EV environment. It is a major pain in the backside but if you don't have a journal archive you can find the missing emails from then that is what you are left with.

Do you have the Deleted Items Recovery featured turned on?

You can do a search of all archives to find if any other archives have his emails, but without the Journal archive you won't be assured of finding them all. In that case, Tony's suggestion of a restore woudl be the least obtrusive to other users. EV does not do a granular backup of the individual archives.
