what is difference between snapshot backup and normal backup

Please tell us what is your perception of 'normal' backup.

Many policy types are dependend on snapshots.
Even 'normal' MS-Windows filesystem backups where VSS is used for open file backups.

Other policy types that need snapshot technology is MS Exchange 2010 and higher and VMware and Hyper-V agent policies.

You can find more info in the relevant agent guide.

FlashBackup and offhost backups also need snapshots. You can read up in Snapshot Client manual about different snapshot types and technologies.

Snapshots 

Point-in-time copies, also known as snapshots, are used to provide a static copy of data, even when the application is running and making modifications. Snapshots provide the ability to achieve consistent backups, even while an application is online. Point-in-time copies also provide the ability to work around the problem of busy files.
