If not, below is the link to the NBU Exchange Admin Guide.  I do not backup Exchange on a daily basis, but I read through the restore steps in the guide and it seems pretty thorough.

http://seer.entsupport.symantec.com/docs/290211.htm

I would just make sure you have created a Recovery Storage Group within Exchange prior to performing your restore. NBU will automatically find the RSG and restore to it.  You just need to choose which options you want, such as redirecting the logs, etc.

you don't say what kind of backups you are doing so I don't know how well my instructions will help.
I am going to give you a somewhat compressed list of restoring to an RSG.

If this is your first time doing the 2007 restore - work with your exchange admin.

Nobody told me how to do it we had to work it out.

On exch 2007 server
open the exchange Management Console
Select Toolbox
Select Database Recovery Management
select Go to Welcome screen
for info add a label like "restoring SG2 to RSG"
should have the name of your exchange server
should have the name of your domain controller
choose next

(at this point I would do the clean up of an old RSG - which you would not have to do the first time)

Choose Mount or dismount databases in the recovery storage group
Make sure it has your 2007 server name
make sure the storage group is Recovery Storage Group
check the Mailbox Database
select Dismount selected databases

Now choose Remove the recovery storage group
Make sure it says your 2007 server name
Make sure it says the Recovery Storage Group
make sure it says Mailbox Database
Choose Remove the recovery storage group
At this next screen expand the information to Show Removed RSG Information
from there get the Drive and path for the Database Path ( this is where the RSG put the edb when it was restored)
Now go to that path and remove the files in the dir (cleaning it all up for the next restore)

Now you are ready to setup the RSG for your restore
Go back to task center
Choose Create a recovery storage group
Choose the Storage group you want "First Storage Group" for my example
choose next
You can leave the default name for the recovery storage
the default file location for the RSG puts the RSG on the same drive as the prod database which most likely will not have enough room.
Change the location to a drive that you have set up for doing RSG's
Select the browse button on each of the 3 paths shown and select the drive and dir you want - you can create a a subfolder if you wish
For the Recovery database path you will need the dir and a file name.
Select create the recovery storage group
you will receive a confirmation that the RSG was created

At this point you can start your NetBackup restore like you use to do for 2003

After the restore is done verify that the recovery storage group file location has files in them(this is that dir you made on a different drive)

Go to toolbox again
Choose Mount or dismount databases in the RSG
verify that it says your 2007 server
verify that it says RSG
(it may already be mounted if so go back to previous page)
mount the database

At this point you are ready to get a mailbox out of the RSG
you can use Exmerge if you have it - BUT IT DOES NOT RUN ON A 2008 SERVER.  If you have it on a older server you can run it just specify this 2007 exchange server.

Your other option is Merge or copy mailbox contents
in Toolbox
Choose Merge or copy mailbox contents
Make sure it says your 2007 server name
make sure it says RSG
Choose Gather merge information
Choose Perform pre-merge tasks
Select the mailboxes you want to copy or merge
Choose Perform merge actions

If this is your first time doing the 2007 restore - work with your exchange admin.

Disclaimer - these instructions were written for our environment based on the way we do exchange backups and may not work exactly for you.

Work with your admin and TEST TEST TEST TEST TEST write your own detailed instructions with screen shots.
