I was wondering if you can find out if Symantec Enterprise Vault is able to unstub data that had been stubbed by a competitive product (Message Solution)?

Have a look at this:

It list out some options and third party utilities available.

EV Can only unarchive messages, files etc that it owns and it knows about, it does not have API's or access or any other procedures for products other than EV
You would have to look at third party utilities such as tools from Transvault or globanet etc

Also there are a plethora of different consultancy groups that can help with the projects such as Trace3, Bluesource, Globanet etc
