Upgrading from 6.0 to 7.5 or 8

Having a diffucult time finding information on recommended steps for an upgrade like this.  I understand that I need to install each version in order, but not much else.  The reason for the upgrade is to allow for an Exchange 2007 system.  What version supports Exchange 2007?

Exchange 2007 is supported on Windows Server 2008 with Enterprise Vault 2007 SP3 or later
